Banana Bread
We had too many bananas getting ripe, so I tried this Banana Bread recipe, and it was really good and easy – my favorite kind of recipe. I needed it to be pareve, so I used margarine. I also used some whole wheat and some white flour. I sprinkled walnuts on one of them, but would love to sprinkle choc. chips the next time:
Banana Bread
INGREDIENTS
3 or 4 ripe bananas, smashed
1/3 cup melted butter (I used margarine to make this pareve).
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
METHOD
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Good looking recipe at first eyeball! Bananas are never given a chance to get overripe in our house, they’re gone within a day of buying them (I think the kids who don’t live at home all the time even sniff them all the way in the army). When I do have a chance to make banana bread (I have to hide the bananas) I use white chocolate chips and pecans. Makes it really special!
BTW, margarine is supposed to be evil, but I haven’t found a banana bread recipe with oil that I’ve yet to like as much.
I really like to cook healthy, but somehow haven’t gotten rid of using margarine yet! I think I will try the recipe with some oil and applesauce as a combo and see how it works. My husband gets Bananas super cheap at a local warehouse club, but normally I am in the same boat as you. Can’t provide the bananas fast enough….
The best (and probably unhealthiest) banana bread I ever had was made with Bisquick, chocolate chips, and peanut butter chips. Unfortunately, my oldest is allergic to dairy, eggs, and nuts, so there goes that one.
I have yet to make a bad recipe from Simply Recipes.

I never have been a fan of anything that was “too banana-y” But this is DELICIOUS. Just made a loaf and serving it warm with cream cheese, everyone gobbled it up! Luckily I have a bunch of overly ripe bananas in the freezer, so we can have more….
